Makes about 24

Preparation time 30 minutes

Baking time 10-15 minutes

You need

• 180 g butter

• ½ cup castor sugar

• 2 teaspoons vanilla essence

• 1 extra-large egg

• 1½ cups cake flour

• ½ cup cornflour

• ⅓ cup cacao powder

• pinch of salt

• 2 cups cornflakes

• 80 g milk or darkchocolate, melted

Here's how

1 Cream the butter, castor sugar and vanilla essence together until light and fluffy. Beat in the egg. Sieve the flour, cornflour, cacao and salt together and mix it into the butter by hand. Add the cornflakes last and mix until smooth.

2 Preheat the oven to 180 °C. Roll the dough into 24 walnut-sized balls and put them on greased baking sheets (you can also line the sheets with baking paper). Use a fork to flatten each biscuit slightly and bake for 10-15 minutes until lightly browned. (The biscuits will be chewy after 10 minutes and crunchy after 15 minutes.)

3 Let the biscuits cool down and then dip half of each in the melted chocolate. (Alternatively, you can drizzle the chocolate over the biscuits instead of dipping them.) Allow the chocolate to set before storing in an airtight container. The biscuits aren't too sweet and the layer of chocolate balances out the flavours.
