Makes 8 slices

Preparation time 10 minutes

Cooking time 20 minutes

You need

  • 4 medium-sized tortillas
  • 3 tablespoons cream cheese (I prefer the chives flavour)
  • 9 slices smoked ham
  • 200 g mushrooms, chopped and fried
  • 2 cups grated mozzarella
  • 2 cups baby spinach, stems removed
  • 3 tablespoons tomato salsa

Here's how

1 Preheat the oven to 180 °C. Toast the tortillas in a dry pan until crisp on both sides - this will improve the flavour of the stack.

2 Spread cream cheese on three of the tortillas. Top each tortilla with the sliced ham, a layer of mushrooms, spinach and cheese. (Set aside half a cup of cheese to scatter over later.) Stack all four tortillas on top of each other, putting the tortilla without cream cheese on top. Lightly press down on the stack.

3 Spread salsa on the top tortilla and sprinkle over the rest of the cheese. Transfer the stack to a baking sheet and bake for 15 - 20 minutes until the cheese has melted. Grill for a few more minutes until the cheese on top starts to bubble. Cut the stack into slices and serve with extra salsa.
