If you like peri-peri, this one is for you. It is hot, but that’s the idea – I serve it with plain yoghurt to tame the heat.

Ingredients

  • 2 large red chillies
  • 4 garlic cloves
  • 30 ml lemon juice
  • 30 ml olive oil
  • 30 ml smoked paprika
  • 5 ml onion powder
  • 10 ml honey
  • 24 chicken wings
  • salt and freshly ground black pepper
  • plain yoghurt, to serve

Prepare red-hot coals - you want high heat and lower heat once the chicken wings have browned.

Place the chillies, garlic, lemon juice, olive oil, paprika, onion powder, and honey in a food processor and pulse at high speed until smooth.

Place wings in a folding grid and season well with salt and pepper-Baste chicken wings thoroughly with the chilli mixture.

Braai about 15 cm above the coals until golden brown all over, about 2-3 minutes a side.

Then lift the grid to about 30 cm above the coals and braai for another 15-20 minutes or until done. Serve with yoghurt.
